Soup Recepies: Gazpacho  Preparation time: 25minutes,plus chilling Serves 6 Calories 162 per portion Soup Recipes: Gazpacho You will need  2 small slices brown bread, crusts  removed and torm  600 ml/1 pint tomato juice  2 garlic cloves, peeled  1/2 cucumber, peeled and chopped  1 red and 1 green pepper, cored,  seeded and chopped  1 large onion, finely chopped  750 g/ 1½  lb tomatoes, skinned,  seeded and chopped  4 tablespoons olive oil  2 tablespoons red wine vinegar  salt and pepper  ¼ teaspoon dried marjoram  ¼ teaspoon dried basil  1 tablespoon chopped fresh  parsley  For the garnish  croutons  sliced stuffed green olives  chopped cucumber, peppers and  spring onions  Place the bread in a blender with the tomato juice and garlic, leave for 5 minutes, then purée until smooth.  Add the cucumber, peppers, onion , tomatoes,olive oil,vinegar, salt and pepper to taste, marjoram and basil,  blending well.

Soup Recipes:Bacon and Split Pea Soup  Preparation time: 10 minutes, plus overnight soaking Soup Recipes:Bacon and Split Pea Soup  Cooking time : 1 hour 10 minutes Serves:6 Calories : 295 per portion   You will need 100g/ 4 oz split peas 1 small turnip 1 carrot 2 leeks 2 tablespoons oil 8 rashers rindless smoked streaky  bacon, diced 1.4 litres/ 2½  pints ham or chicken stock salt and pepper  ½ teaspoon dried mixed herbs 150 ml/ ¼  pint single cream 1 tablespoon chopped parsley to garnish Cover the split peas with cold water and soak them overnight. Drain well. Dice the turnip and carrot. Slice the leeks into rings. Cook the vegetables in the oil for 5 minutes, add the bacon and continue cooking for a few minutes. Add the stock and split peas. Season well with salt, pepper and the mixed herbs.  Simmer gently for an hour. Blend the soup in a liquidiser until smooth. Return the soup to the saucepan and reheat over a lo
